Quick & Easy Yummy Dip!

Okay, so today is suppose to be a W.O.W post, but I had to come tell you about this tasty dip I made for work!

At work, we have been having potlucks once a month for staff meetings, and typically I bring my dirty rice, but was unable to do so, because someone else decided to do rice this time…

So what do you do when you want to make something tasty, you don’t want to spend too much time doing it, and you want everyone to be pleased?


It’s simple!

What you need:
1 pound of pepperoni sausage, diced (I just buy 2 packages!)
2 cans of cream of mushroom soup
2 packages of cream cheese, softened

Preheat your oven to 350 degrees
This next part can seem like a task at first, but it gets easier, take a dish and mix the diced pepperoni, cream of mushroom soup, and cream cheese all together.

(This makes quite an interesting looking mixture!)

Some bake it in the over for 15 minutes, I choose to bake it a little longer, around 20 minutes, and wait for it to get lightly browned.

In the meantime while you are waiting for this amazing mixture to come together, cut up some bagels in small pieces and put them aside.

After 20 minutes, you will have a delicious dip, (I’ve been told it taste like pizza) ,   and for an added touch you can even heat the bagels up if you like!

I know the ingredients together might sound insane, but they make a delicious combo!I swore I wouldn’t like it, until my cousin made it and I was in love! So I honestly have her to thank for this delicious recipe!!

Foodie Friday Blogtober Fun!

Whew! That’s a mouthful isn’t it?!?!?

Today is the last day of the Amazing Blogtober Fest I have been participating in all week! I apologize to my readers who were looking for my post yesterday! It was a big day for me at work, and it required working extra long hours then having a birthday party to go to. Needless to say, I left my house at 7:20 yesterday morning, and didn’t return until 10 p.m. (CAN WE SAY EXHAUSTED?)

Anywho, enough about that, I can say, that I’m not quite the baker or cook, but I do enjoy food. So While I may not be any of those things, I’m a pinner!lOL! I love food and am always on pinterest looking for great recipes~ Eventually, I will take a chance at trying to make all of them, and I’ve made some, so I’ll share with you some of my favorite FALL recipes! Creamy Chicken Soup- This recipe is AMAZING! I’ve actually attempted to make this! Nothing like a good hot bowl of soup to put you in the mood! I made a huge pot and my husband and I enjoyed it (we even had some leftovers!)

Sweet Balsamic Grilled Chicken- So this isn’t a “fall recipe” , but I love it so much I thought I should share! I love chicken! I can eat it no matter what the season is, and this is such a delicious combination, I thought, why not add it to the list?

As far as a recipe I would like to try, I love Cupcakes more than you will ever know, and can’t wait to try this fantastic recipe: Apple Cupcakes with Cinnamon

I love ANYTHING with Cinnamon, and I thought, what a nice spin on the traditional cupcake and a way to make it healthy! This is something I’m looking forward to trying pretty soon, but if you beat me to it, please let me know how it is!!

W.O.W. 19- Cravings Suck!

I swear I don’t know what my problem is.
I’ve been doing so well, but lately I’ve been craving foods in a way that I want them everyday which is not me. (TYPICALLY)
I swear, right now alone I’m craving Ice Cream and Mac and Cheese!
I’m not pregnant, nor do I need either one of them but I’m craving them.
I’m learning how to manage my cravings, but lately they’ve been driving me just a lil insane.
Last night, I gave in to my cravings, due to the fact I had a ridiculously hard workout, and all I wanted was fries covered in cheese and bacon. Wrong on so many levels, but right what I wanted (lol)
I know I must do better, and I’m attempting to, but now that I’m seeing results, doesn’t mean I can just eat what I want.
Having a healthy lifestyle, doesn’t work like that…
It’s all about choices right?

I promise to at least and try to make better choices. It’s not that I’m making horrible choices, but I definitely could do better…

As far as the scale is concerned, I’m not going to be addicted to it, because it won’t make me feel better, however I will get on it every other week to keep track of my weight. I’m not going to completely do away with it.
Also, I’m going to continue to see where I can cut back extra fat, and UP my water intake. We all know that we need a decent amount of water (typically about 😯 oz. which may seem like a lot, but we do so much, we need to replenish our body!!!

So What Have I decided to do?

Not be a scale hugger.
Purchase More Lunch Food (sometimes my downfall is going out)
Push myself harder in workouts
Get AT LEAST 75 oz of water a day (that’s alot!)
Kick some of these crazy cravings in the butt!

Those are my goals for now.

What a Weekend!

Hey Friends!

How I’ve missed you! I know it’s been a few days, but trust it’s been a great weekend! Let’s start with Friday once I got off work. My husband and I headed to the Jumbo Gumbo Cookoff at the Rivermarket.

It was 20 bucks, but that included trying all different types of Gumbo, good music, and voting on your favorite Gumbo!
I fell in love with two Gumbo recipes, that tasted similar to an old classic Rice & Gravy Recipe. The other one, had a bit of shrimp in it, and was just all around tasty! Here are some snapshots of the event:

What an awesome event! Something we will probably go to each year! Especially since all of the proceeds go to benefit the Allen School! I’m not sure if any of the people we voted for with a dollar won, but the process was fun!

Saturday we relaxed, and then met with a gardener to talk about our backyard and some landscaping options. Our yard is horrible, so this was a lot of fun! After that, I decided to get a deluxe pedicure (which was amazing)! It included hot stones, a scrub, EVERYTHING! I will be going back there next month as well!!!! Not to mention, they put the cutest design on my toe!!! I opted for a bright yellow nail polish with a beautiful black and silver flower design! So happy that I did!!!!!

Sunday, our gardner we met with the day before gave us an assignment to check out some flowers at Good Earth and that’s what we did. Can I just say I never realized how much I love flowers?!?!?!?!? They were AWESOME!!!!!! I just had to take some photos of them:

I can’t wait until we can get a few of these babies in our yard! What a fun filled weekend! I’m still recovering! Now I have to get my act together and get busy this week! I have to pick out flowers, and continue with my workout goals! Hopefully Ill stay focused and have fun!

Friday and Pooped!

That’s right.
I can barely keep my eyes open!
I guess thats due to me staying up a lil later to watch America’s Next Top Model despite the fact I wanted to go workout around 6am this morning! I actually went and enjoyed myself! My friend Stacy was there, and boy is he a motivator! I think he even causes me to motivate myself even more!

On another note, It’s friday, and my brain is slightly fried. I don’t know if it’s due to the fact that it’s simply Friday, or if it’s because we had a potluck at work yesterday, that has caused EVERYONE to be a bit on the sleepy side. So not much going on, but I have a few things I look forward to sharing with you on my blog:

1. I’m planning a new giveaway. Maybe not a big one, but hey, there is nothing like free right?
2. I’m thinking of giving my blog a facelift in the next month or so. Any suggestions?
3. I’m going to be reviewing some products, and telling you all about it!
4. I think I’m going to incorporate more style info as well since I do believe I have somewhat of a style 🙂

On an additional note, I’ve been having lots of fun with pinterest and finding some really cool things to pin and try out. I’m so in love with the inspirational stuff they feature!! Check out some of my fav pins:

Well, Hello Mon…

Well, Hello Monday!

I don’t know why I’m so cheery. I’m truly not happy to see you. I mean I’m thanking God I have seen you, but I wish the weekend would have lasted a bit longer! I have to tell you some of the cool things I’ve been up to!

I’ve added 2 beautiful bowls to my kitchen items, thanks to those talented kids within our program who made bowls to be auctioned off to raise awareness for Hunger Relief and raise money for our organization!

Friday I got to relax a bit, then Saturday I had a very good workout doing Zumba! I pushed myself and though I craved everything at IHOP, I managed to talk myself into going home and making 2 scrambled eggs with light cheese and a little bit of honey ham. I was trying to be satisfied but not all the way full because I knew my husband would want to take his friends out to dinner later, and boy was THAT GOOD!

Pasta Copelands

A new favorite dish of mine from Copeland’s restaurant! It consists of tender shrimp, sautéed with garlic mushrooms and fresh herbs over angel hair pasta. I got a side of pirogue sauce (similar to Alfredo) to give it a bit of additional flavor and WOW! It was awesome! Combine that with good friends sharing an appetizer, what more could you ask for? I’m so glad I decided to go with light eating to allow myself to go a bit overboard for an early dinner! That’s another key factor here, I knew I wanted to go out and “cheat” a bit, so dinner was at 4 instead of later since the dish was so heavy! It was worth every last drop! I love how great the food is and the atmosphere at Copelands! Not to mention, we always get this wonderful waiter named Marcus, who simply knows how to give the best service and advice when it comes to picking a dish! There is a reason I love that place so much!

Sunday morning, my hubby cooked a breakfast of pancakes, eggs, and sausage. While he experimented with the pancakes (yeah I didn’t care for them too much lol), I enjoyed the eggs and sausage. He had to work the afternoon and night of Easter, so I did spend quite some time by myself, but my lovely student, Peter, went and ate dinner with me so I wouldn’t have to be by myself:) I also had some great friends who shared messages with me, and text me so I wouldn’t be completely lonely (Thanks Tiara and Monique 🙂 I realized Holidays are very important to me, and that is why I want to spend them with the people that I love most 🙂

Food, Makeup, and ASH!

Hey friends! It’s been really crazy these past few days, and it’s going to be a pretty crazy work weekend.  However, I wanted to share with you all a few things.

I finally recieved my Shakeology!!! It’s time for me to see what this stuff can do for me in a month! I told you all about it before and the amazing health benefits of it. I can’t wait to replace one meal with this stuff and see what happens in my life!!! I would love to lose some weight, but overall live a healthy lifestyle! There is a group of us drinking this stuff so it should work out pretty well!

I promise to keep you guys posted and let you know what I think.. Today is typically a weight on wednesday post, but being that Its so hectic at work, I’ll go more in depth on weight stuff next week (if I remember!)

While I plan to start shakeology, I’m still really happy with these Spectrum Comsmetic Eyeshadows!! They show up so well on my skin and I think they compliment my skin! Today I decided to use my new Color Tattoo and 3 shades from Spectrum Cosmetics. Here are the eye colors I used below:

After applying the eye shadow, I was impressed with the very vibrant look I came up with. i have to think of a name for this one.. Any suggestions?

SEE? I think this is a perfect blend of just vibrant colors!!!!!!! You must try!!

It’s been a pretty good day so far…. My co worker B took me to a really cool place for lunch! It was called Cheers!

And I must tell you my grilled Turkey Sandwich was delicious!

But enough for now… I just wanted to keep you all posted with what is going on… Today is Ash Wed so it’s time for me to enter the Lenten Season and I’m really thinking long and hard about what to give up. I want it to bring me closer to God and be something worth while. I have to get my thoughts together!!!  Also, I wanted to know what topics would you like for me to discuss? I’m always open to talk about whatever! Just let me know by leaving a comment!
